Coffee of the week - #10-16

We know you have missed them, DaMatteo! The west coast Swedish roaster have once again roasted the coffee of the week. They never disappoint.

The farm Finca Los Altares is located in the very heart of Huila. The region is famous for its green, mountainous scenery with great potential to grow coffee in rich, fertile soil at high altitudes (1800 mail). Another special feature about Huila is the changing climate and the fact that the weather always surprises. To harvest, process and finally dry coffee under such unpredictable circumstances is a true craftmanship where every single step will affect the final quality - and by that - also the flavour of the coffee. Taste profile: Vibrant, fruity and creamy.

Second out is a well known coffee amongst our subscribers, but brewing a Kochere is always entertaining. What does the roaster say about it?

Kochere is a cooperative consisting of about 800 smallholder farmers cultivating their coffee in rich, red hued soil. The ripe cherries are picked by hand and taken to the local washing station where they are processed, dried and sorted. When the coffee is sold the profit is divided over the farmers depending on the actual weight of their harvest. The fact that we each year get to follow their work in the coffee we drink is only one of the delicate benefits of a long term relationship with the producers.Taste profile: Vibrant, sweet with notes of bergamot.
