Coffee of the week - #19-17

Kaffa, welcome onboard!

We are pleased to have a new coffee roasting partner onboard, and soon you can have a different roaster for every shipment throughout the year. Often do we visit their cafes, Mocca and Java, hence we know very well what they stand for in terms of quality.

First coffee out is Omar Viveros from Colombia. We´ve visited Africa a lot lately and it is time to tune in our taste notes with a smooth and slightly more citric coffee. Kaffa have bought coffee from Omar for 8 years know and they have a reputation for producing some of the absolute best coffee in the Hula region. Over the past years they have been struggling with lots of rain and periods of drought.

Along with the coffee trees they have natural vegetation including eucalyptus amongst many other varieties of tress and flowers. This makes the coffee trees naturally resistent to the Colombian rust called Roya.

Second coffee out is Heleanna. She is not a farmer, but a local buyer of coffee in the Yirgacheffe region. The berries are ripe and she is slowly processing them with a cautious drying process. This is how they get the noticeable and floral taste on the region. The natural process is the traditional way to process coffee, but it´s super dependent of 24/7 surveillance to get a good result.
